How is Camembert made?
After we have collect the milk, we warm it at 37°C to skim it.

Then the milk is curdled with ferment in tank. The curdled is cut in little square. This step take 1h30. |
The cheese is moulded with a ladel in pierced mould. The cheese is dripped about for 5 hours. |

The cheese, wich is 3 days old, is unmoulded to be salted. |
Finally, the cheese is ripened for 14 days in a controled atmoshere. |
